The First Gooseberry Patch Dinner on a Dime: American Chop Suey...:
This is the first dinner on a dime I am trying out. After 4 days of being snowed in , you tend to read your cookbooks, and explore you cabinets for ingredients.Well luckily I had all the ingredients for it, there were 2 exceptions though, I used a pound of ground 93/7 ground turkey, because I did not want to thaw a 3 pound roll of beef, for 1 pound. The other was, I used a mesh mash of dried pasta, because I did not have egg noodles, and it came out great, the hubby did bring up a good point though, it was a little dry.Maybe a little bit of water mixed with the tomato soup would help to keep things moist.

First Bread on a Dime from Gooseberry Patch: Friendship Cornbread...:
Once again I decided while being snowed in, to pull out the above pictured cookbook, and try a bread that caught my eye.Today's recipe I decided to try is the Friendship Cornbread.  This was a rather easy recipe to put together. It was not near as gritty as what you get in the box, which is a real plus.
After you make this, you won't want to go back to the other. The recipe is one of those that really could swing to either the sweet or savory side, depending if you put anything in it. But, the good thing is if you are a sweet cornbread fan this is definitely for you.

Second Bread on a Dime from Gooseberry Patch: Honey Wheat Bread...:
Here is the second bread I decided to try while snowed in this last go around, it comes from the above mentioned cookbook, and the recipe is the Honey Wheat Bread. This was fairly simple to put together, but you need a chunk of time to complete this. The flavor is good when warm, and should be served sliced with honey, sweet cream or regular butter.

I did these biscuits(Country Potato Biscuits) for Mother's Day 2011.
I cooked for my mother in law, my mom , husband and Step-father in-law.
I had to let them go a little longer than recommended. The inside was good, but the outside was dry.

This is the meatloaf I did for Mother's Day 2011. This is the recipe for the Italian Mini Meatloaves. So each of my guest had their own serving, instead of hacking into one big one, and have it looking gnarly. When I made these it called for 16 oz of stuffing mix, I would cut it back to 8oz ( if you make it and put it in the fridge over night and cook the day of the lunch.) It had a good flavor though.

The first visit to the Gooseberry Patch...:
Resulted in testing out a recipe from the Christmas 2010 Magazine, and trying the Lemon Tea Loaf .
This has a really good flavor and is easy to do. The flavor is really mild, it is not a knock you out on your can, kind of flavor, like lemon can be a lot of the time.
I actually ended up using 4 T of the lemonade concentrate, I put 2 into the recipe, and brushed with the other two. I am hoping , that the guys(my test kitchen tasters)  in my husband's office like this.If they do, then I will keep the recipe for holiday edible gift giving. I wonder what this would be like with a different fruit extract, keeping the lemonade concentrate. Keep your eyes peeled for more trips to the patch, as 2011 is the year of the Test and Review in my home kitchen. I have saved so many, so I decided to start trying a few out.

Second trip to the Gooseberry Patch-Shortbread Cookies with a twist....:
I wanted to try the shortbread cookies out of the 2010 Gooseberry Patch Christmas magazine, but put my own twist on it.So, instead of making a regular dough, I added 2 oz of the General Mills International Coffee beverage mix , Suisse Mocha Cafe.
They came out with a nice mild flavor, and only took 15 minutes to do before they got a golden color on the bottom. (I originally was going to do the thumb print, but then I decided to do them the other way pictured for this test.) You can also do the original flavor, and they come out just as yummy. (The original took me 25 minutes).

Third trip to the Gooseberry Patch: Fluffy MarshMallows :
This was the first time in a while I have dealt with scorching hot simple syrup. But with the official first snow hitting us today, I thought I would test something as white as the snow, and I looked in my copy of the above mentioned Gooseberry publication,
and the marshmallow recipe caught my attention.
I am sending this first batch to my testers, (aka. husband's co-workers) to see what they think. If the guys like it, then I will be making a spin off flavored with cinnamon and tinted red, and a batch flavored lemon, and tinted yellow.The real kicker that made this batch really good, was the Pure Mexican Vanilla that went in, that my mom and grandma brought back when we went on a family vacation to South Padre Island,TX and went in to Mexcio one day, with my aunt, and cousin, when I was younger. I am really looking forward to the cinnamon and lemon batches though, as I am making them for a dessert course on Tuesday, along with a couple more recipes, for a bible study I will be attending.

Fourth trip to the Gooseberry Patch : Easy Truffles :

For this fourth trip into the Gooseberry Patch, I once again used the magazine mentioned above.This time I wanted to try the Easy Truffles, out. I decided to try them, because I needed some cheering up, and I married a chocoholic, so who better to test them, in the end. As the recipe states, these are truly easy to put together, especially if you want to take a hostess gift, they are good all year around, not just at the holidays.
It took me about 3 minutes to get the chips melted and smooth in 1 minutes increments. After that, it went pretty smooth. I just wish I had a larger bowl, so I would have not gotten so much on me while stirring. One of the things that helped me out while doing this recipe was a small cookies scoop, to start the ball process, after that rolling went faster, after the powder sugar coating.After sitting in the fridge over night , they set up quite nicely. My husband had one before they really had time to set and meld, and he said it reminded him of a ball of crunch.

Fifth Trip to the Gooseberry Patch.. Caramel Hot Chocolate/Cookies/Cake:

This trip to the Gooseberry Patch today, was to try the Caramel Hot Chocolate recipe from the above mentioned magazine.
This recipe was very simple and straight forward. But I think it would be good with a milk chocolate base, the base stated in the recipe just comes out to rich for my taste. The whipped cream though is right up my alley. This is really more of a sipping hot chocolate vs. what we are used to out of the packet. Guaranteed you have this, and you won't need a sugar boost until the day after you have it.
I did find a use for the rest of it, if you do not have anyone else that will drink it. This makes a killer sugar cookie, and cake. In cookie/cake form it really balances out flavor wise.I did jar what did not go into the cookie mix, for later use, and the whipped cream is in the freezer, it taste better than cool whip.In regards to the cookies, the ladle used holds approximately a 1/2 c of liquid, and I used 2 ladle full in 2 cookie mixes, and 1 stick unsalted sweet cream butter, and 1 egg. Then I just mixed and scooped, baked off 12-15 minutes.I used 2 cookie mixes, because with just one cookie mix, it turns soupy, so 2 thicken it up nicely, to be able to scoop.
I hope you enjoy this. It may be a yummy drink for some, but for me it makes a killer cookie/cake.

This is an extreme up close of my biggest Mother's Day Cooking Failure. Chocolate Meringue Cookies. The recipe calls for beating the egg whites to stiff peaks, the beating in the other ingredients. Don't beat the second part, Fold It In, or you will have soup, and a disaster on your hands.

This is the corn I did for Mother's Day. I did not have the time to grill, like the recipe called for, so I used a 1/2 bag frozen I needed to get gone, and it came out just as good, if not better.

This is the Strawberry Peach Soup I did for Mother's Day, and it came out great. I did this in my smoothie blender, and used 1 bag of frozen peaches, and fresh strawberries, and the rest of the ingredients listed in the recipe . I was able to fit all the fruit in one go around, and then added the rest of the ingredients, and gave it a good blitz. I am looking forward to trying it with a different fruit this summer.
